Tenor is a regional blend grown and harvested by farmers in Nicaragua's Matagalpa department and subsequently purchased, fermented, and dried by Ingemann Fine Cocoa. A special fermentation style makes it the perfect source cacao for high-percentage chocolate such as this 85% dark bar.
This cacao is organic in practice, but not certified.
