New Bar: Nicaragua, Tenor - 85% Dark
After over a year of searching for the perfect source cacao, I'm proud to release a new 85% extra-dark bar, made with very special cacao from Nicaragua.
What makes this cacao the perfect fit for extra-dark chocolate? Much of it comes down to the fermentation and drying process used at origin. Amazingly, my sourcing partner and producer in Nicaragua, Ingemann Fine Cocoa, was able to map my goals as a chocolate maker to a specific style of fermentation and drying; the resulting chocolate is mild despite its high percentage, creamy, and full-flavored, with wine-like secondary notes.

You'll find that it makes a phenomenal match for red wine, bright coffees, high abv craft beers, and fruit-forward scotch.
It's also a testament to the power of the work done at origin, and affirms the value of closer collaboration between chocolate makers and cacao producers. That's why I've named this bar "Tenor," after Ingemann's label for cacao purchased from their network of Matagalpa-area farmers, fermented and dried in this specific style.
Finally, this bar premieres a new packaging look, designed to remind us of single-origin chocolate's beauty as a sustainable minimalist luxury--a thoughtful gift to ourselves and those we'd like to appreciate.

With fall settling in and temperatures coming down throughout much of the country, we can reduce shipping rates once again for the cooler months.
Orders over $50 ship free, and orders under $50 ship for a flat rate of $10.
Living in or sending a gift to someone in a warmer part of the country? Not to worry, we'll still protect the chocolate for you. If temperatures at the destination are expected to put chocolate at risk of melting, insulation and ice packs are automatically included at no extra charge.
