New Harvest Belize - Available Online, Coming Soon to Stores
Even at the same origin, no two cacao harvests are exactly alike. Differences in weather during the growing season and the countless variables of the fermentation and drying processes can all influence the flavor of a given harvest. That natural variability is part of what makes chocolate making--and eating--so exciting.
In that spirit, I am happy to share that my Belize 68% bar is now being produced with a new harvest from the Maya Mountains. If you've enjoyed this bar in the past, fear not--it is every bit as sweet, creamy, and fruity as before. You may find the fruit flavors to be drier than they were in the previous harvest's bars (rich raisin rather than juicy blackberry). I've visualized the flavors for you below.
2-ounce bars of the new harvest (2017) are available now in limited quantities. If you'd like to be among the first to get some, please order online and leave me a note at checkout indicating your preference. The new harvest will start rolling out to shops as my stock of the previous harvest (2016) runs out.
