Out Now: India, Anamalai - 65% Dark
Single-origin is one thing; single-estate is another. The cacao in this bar falls into the latter category, grown alongside coconut and nutmeg at the Anamalai farm in Tamil Nadu, India's southernmost state.
The flavors here are incredibly distinct--as they should be in single-estate chocolate worthy of the label.
While the chocolate level itself is on the milder side, massive fruit and nut notes make for what I've been describing as a "peanut butter and jelly" effect. And to push that childhood-lunchbox nostalgia over the top, I boosted the sweetness to 65% dark--about as sweet as I'll ever go.
