Explore Chocolate with Me this February
This February, I'm excited to be part of several classes and events that will give you a deeper understanding of chocolate--not only where it comes from, how it is made, and how these factors influence its flavors, but also how to pair it with other food and drink favorites, including wine and cheese. Obviously, there will be lots of tasting involved! Take a look at the list below and follow the links for further information.
Sample chocolate (from milk to dark) while learning about its history and place in the world today. I will be on hand to discuss my process of creating unique flavors from cacao and whole cane sugar. This is a free, open house event; adults only, please.
In this class, you will learn all about how to pair cheese with chocolate and which flavors best complement each other. Purchase tickets for this class alone, or as part of a cheese education series offered by Fromagination this winter/spring.
In this easygoing yet educational chocolate & wine class, we'll learn the bean-to-bar process, discover the complexity of single origin chocolates, and explore how to pair them with wine. Find out what style of chocolate you enjoy most and what type of pairing works best for you. Please note: this class is sold out, but you may join the waitlist by contacting Table Wine directly.
As a reminder, markets are an opportunity to connect in person, sample my full selection of bars, and learn more about how single-origin chocolate can benefit producers and consumers alike.

Mocha Porter @ Working Draft Beer Company
If you've been reading these newsletters, following me on social media, or spending your time wisely in the taproom at Working Draft Beer Company, you'll know that we have collaborated on a handful of single-barrel cocoa-nib-infused beers in the past. In December, we made a much larger batch of chocolate beer, such that as of this writing, it's still available at WDBC on tap and in to-go 32oz cans.
From Working Draft: "Mocha Porter is a style rife with artificial flavorings to create that sweet mocha syrup flavor. We teamed up with Wm. Chocolate and Ruby Coffee Roasters to make a better, more natural take on the style. Coffee from El Salvador & cocoa nibs from Ghana create notes of brownie, panna cotta, & cinnamon."
Even with the added heft of coffee and chocolate, it's a smooth and drinkable brew that stands on the quality of its carefully sourced ingredients. I recommend it enthusiastically.
